Yet another egg post.... Sorry. I love my eggs. I have breakfast for lunch or dinner almost everyday. In fact, sometimes I am accidentally a vegetarian and forget to eat meat at my meals. I always have eggs in at least one, usually always have a post workout protein shake, and I've been eating a lot of salmon lately. So sometimes that's just how it works out.
Today I decided to get creative with my eggs and make it more of a "mediterranean" type dish. I had some Wegmans Mediterranean feta cheese in the fridge, and some spinach, tomatoes, mushrooms, and onions that I threw together in a pan. I sautéed the veggies with garlic paste, cloves, and some spices.
- 1 egg
- 3 egg whites
- 2 cups spinach
- 100g tomatoes
- 50g baby bella mushrooms
- 25g chopped white onions
- 42g Wegmans mediterranean feta cheese
I added some ketchup and guacamole but it isn't necessary. I just love ketchup on my eggs and felt like it needed a little extra condiment love.
Macros (without ketchup and guac)
316 cal/ 11 fat/ 16 carb / 37 protein
Not too bad with the macro count and packed with protein! You could eliminate the fat content with using just egg whites, but I love full eggs so I like to include them in my egg dishes. Not to mention they are filled with omega-3 fatty acids which are great for your muscles and joints!
