Recipe Friday - Superfood Mini Muffins

SuperFood Mini Muffins 

3 Bananas 

3 cups of oats

2 eggs

2 tbsp cinnamon

1/2 cup raisins 

1 shredded green apple

1 shredded carrot 

1/2 cup blueberries 

2 tbsp apple cider vinegar

1 cup fresh spinach 

1/2 cup walnuts 

Pour 2 1/2 cups of oats into a food processor and grind into a flour consistency. Reserve 1/2 of a cup of oats on the side. Remove oat flour from and keep to the side. Add all other ingredients except the walnuts into the food processor. Mix until all these ingredients become "smoothie like". Add the walnuts and pulse until they are finely chopped. Mix oat flour and whole oats into smoothie mixture. You are looking for a batter - like consistency here. Add to a greased mini muffin tin and bake at 350 degrees for 10 minutes. 

Serve warm with grass fed butter (like Kerrygold). 

Make these muffins gluten free by using gluten free oats or changing out the oat flour for another nut flour (like almond flour). 

Recipe yields 36 mini muffins. Perfect for a healthy snack :)
