Pumpkin Oat Muffins

These lower sugar, nutrient dense muffins are perfect for that pumpkin spice craving this fall. 

Here's what you need:

1/2 cup pumpkin puree 

3/4 cup milk (diary or non dairy will work here)

1 egg

1/3 cup applesauce

1 tbsp melted butter 

1/2 cup of brown sugar 

1 cup oats

1 cup flour 

1 tsp baking soda 

1 tsp baking powder 

1 tbsp pumpkin spice seasoning blend (I use this kind from Tacticalories)

1/2 tsp salt 

Preheat oven to 375 degrees. Spray muffin tin with avocado oil or muffin liners.

Combine all wet ingredients in a bowl. In a seperate bowl combine all dry ingredients. Mix slowly together. 

Bake 12-15 minutes.

*I used a mini muffin tin, but you could make a bread or larger muffin here too, you would just need to adjust cook time.
