Cranberry Pecan Muffins

Perfectly tart and sweet these muffins are great with a cup of coffee on a cold morning. Healthy and easy to make! 

Here's what you need. 

2 cups of Kodiak Cakes protein pancake mix 

1 cup of fresh cranberries 

1 cup chopped pecans 

1/4 cup melted butter 

3 tbsp maple syrup 

2 tbsp cinnamon 

2 eggs 

1 cup of milk 

1 tsp vanilla extract 

Mix eggs, milk, vanilla, maple syrup and melted butter together in a bowl. Whisk in pancake mix. Fold in cranberries and pecans. Put in a greased muffin tin. Cook 15 minutes at 350 degrees.
