This recipe couldn't be easier. It's perfect for a healthy lunch, snack or appetizer for a party!
Buffalo Chicken Salad
1 lb chicken breast
1 tbsp avocado oil
1 small red onion (chopped)
1 carrot (chopped)
1/4 cup whole fat greek yogurt (I used Fage)
Hot sauce to taste (I used about a tbsp of this hot sauce, our favorite!)
Chop chicken into bite size pieces and sauté in avocado oil until cooked through. Let cool to room temperature. Add all other ingredients to the chicken, mix and eat.
Can it get easier than that??
Serve yours on top of salad greens, or in lettuce cups for single serve appetizers!
