What's on my plate? (Chicken Summer Salad)

The weather has been amazing lately in good old Western New York. Weird right?  Well every year around this time I seem to get a craving for salads with fruit in it.  

I love sweet salads.  At the restaurant I work at (Pomodoro Bar & Grill on University Ave.... come visit me at the bar on the weekends!! ) our chefs make an amazing salad with strawberries, dried cranberries, candied walnuts, goat cheese, greens, topped with grilled chicken and a sweet vinaigrette.  I wanted to try and duplicate that for dinner last night... So that's exactly what I did with a little bit of my own modifications based on the macros I had left.

Ingredients

  • 5 oz grilled chicken breast
  • 2.5 cups butter lettuce
  • 200g fresh strawberries
  • 40g fat free feta cheese
  • 3 tbsp Annie's honey mustard dressing

The construction of this dish was pretty simple here.  All I did was throw the lettuce in a big bowl, cut up the strawberries, top with chicken breast and feta cheese and then drizzle the dressing on top of everything.

This salad was so big.  The bowl is pretty deep, even though you can't see it in the picture.  I've become a pro at making huge salads and eating for volume... Hopefully you have read my first blog post about the volume foods topic.  If not, read it here:

This meal also made me super full even though it was a pretty low calorie meal.  

Macros:

354 cals/ 7 fats / 32 carbs / 37 protein

Next time I'll definitely add some candied walnuts.  I didn't have the extra macros to add them in last night but it would have made the salad so much crunchier and sweeter!
